For the Salmon:

1 lb salmon fillet, skin removed

2 tablespoons olive oil

1 tablespoon lime juice

1 teaspoon chili powder

1/2 teaspoon smoked paprika

Salt and black pepper to taste

For the Blueberry Slaw:

2 cups shredded green cabbage

1 cup shredded purple cabbage

1 cup fresh blueberries

1/4 cup chopped fresh cilantro

1/4 cup mayonnaise

1 tablespoon apple cider vinegar

1 tablespoon honey

Salt and pepper to taste

For Serving:

8 small corn or flour tortillas

Lime wedges (for garnish)

Instructions

Prepare the Salmon Marinade: In a small bowl, whisk together olive oil, lime juice, chili powder, smoked paprika, salt, and black pepper. Coat the salmon fillet with the marinade and let it sit for about 15-20 minutes.

Make the Blueberry Slaw: In a large mixing bowl, combine the shredded green and purple cabbage, fresh blueberries, and chopped cilantro. In a separate bowl, whisk together mayonnaise, apple cider vinegar, honey, salt, and pepper. Pour the dressing over the cabbage mixture and toss until everything is evenly coated. Refrigerate while the salmon cooks.

Cook the Salmon: Preheat your grill or skillet over medium-high heat. Once hot, place the marinated salmon on the grill or skillet. Cook for about 3-4 minutes on each side, or until the salmon is flaky and cooked through. Remove from heat and let cool slightly before flaking it into bite-sized pieces.

Warm the Tortillas: Place your tortillas on a hot grill or skillet for about 30 seconds on each side, just until warmed and slightly charred.

Assemble the Tacos: Take a warmed tortilla and add a generous portion of flaked salmon. Top with a scoop of blueberry slaw, and garnish with lime wedges on the side.

Serve and Enjoy: Arrange your tacos on a platter, squeezing fresh lime juice over the top for added brightness. Serve immediately while they’re still warm.
