Roasted Tomato and Garlic Bruschetta

2 cups cherry tomatoes, halved

6 cloves garlic, peeled and smashed

3 tablespoons olive oil

1 teaspoon balsamic vinegar

Salt and freshly ground black pepper, to taste

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 teaspoon fresh basil leaves, thinly sliced (plus extra for garnish)

1 baguette, sliced into 1/2-inch rounds

Optional: Shaved Parmesan cheese for topping

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Tomatoes and Garlic:

      - In a large mixing bowl, combine the halved cherry tomatoes, smashed garlic cloves, olive oil, balsamic vinegar, salt, pepper, and thyme. Toss everything together until the tomatoes are well coated.

        - Spread the mixture out onto a baking sheet lined with parchment paper, ensuring the tomatoes are cut side up and the garlic is evenly distributed.

          Bake: Place the baking sheet in the preheated oven and roast for 25-30 minutes, or until the tomatoes are soft and caramelized, and the garlic is golden brown. Stir halfway through for even roasting.

            Prepare the Baguette:

              - While the tomatoes are roasting, arrange the baguette slices on another baking sheet. Drizzle with a little olive oil.

                - Toast the bread in the oven for about 5-7 minutes, or until golden and crispy.

                  Assemble the Bruschetta:

                    - Once the tomatoes and garlic are finished roasting, remove them from the oven and let them cool slightly.

                      - Spoon the roasted tomato and garlic mixture onto the toasted baguette slices, being generous with the topping.

                        Garnish:

                          - Drizzle with an additional touch of olive oil, sprinkle fresh basil on top, and add shaved Parmesan if desired.

                            Serve Immediately: Enjoy warm as an appetizer or light snack, savoring the burst of flavors!
