1 lb rainbow carrots (a mix of orange, purple, yellow, and red)

2 tablespoons olive oil

1 teaspoon balsamic vinegar

1 teaspoon honey

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

2 cloves garlic, minced

Sea salt and black pepper to taste

1 tablespoon freshly chopped parsley (for garnish)

Optional: 1 teaspoon sesame seeds (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Carrots: Rinse and peel the rainbow carrots. If they are particularly large, slice them lengthwise or into even-sized sticks to ensure even roasting.

      Mix the Marinade: In a large bowl, whisk together the olive oil, balsamic vinegar, honey, minced garlic, thyme, sea salt, and black pepper.
