1 cup raw pumpkin seeds (pepitas)

2 tablespoons olive oil

2 tablespoons maple syrup

1 teaspoon sea salt

1/2 teaspoon ground cinnamon

1/4 teaspoon cayenne pepper (optional, for heat)

1/2 teaspoon smoked paprika

1/4 teaspoon nutmeg

Freshly ground black pepper, to taste

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Seeds: If you’re using seeds from a fresh pumpkin, scoop them out from the flesh and rinse them under cold water to remove any pumpkin bits. Pat them dry with a clean towel.

      Toss the Seeds: In a medium bowl, combine the pumpkin seeds, olive oil, and maple syrup. Toss them well to ensure an even coating.

        Add Spices: Sprinkle in the sea salt, cinnamon, cayenne pepper, smoked paprika, nutmeg, and black pepper. Toss again until the seeds are fully coated in the spice mixture.

          Spread on Baking Sheet: Evenly spread the seasoned seeds in a single layer on the prepared baking sheet. Make sure they’re not crowded, as this will help them roast evenly.
