1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces

2 tablespoons vegetable oil

1 red bell pepper, sliced into strips

1 yellow bell pepper, sliced into strips

1 cup broccoli florets

1 medium carrot, julienned

4 green onions, chopped (reserve some for garnish)

3 cloves garlic, minced

1 tablespoon ginger, minced

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon hoisin sauce

1 teaspoon cornstarch mixed with 2 tablespoons water (to thicken)

Salt and pepper to taste

4 cups cooked rice (white or brown)

Sesame seeds for garnish

Prepare the Chicken: In a large bowl, season the chicken pieces with salt, pepper, and a tablespoon of soy sauce. Set aside for about 15 minutes to marinate.

    Heat the Oil: In a large wok or skillet, heat the vegetable oil over medium-high heat until shimmering.

      Cook the Chicken: Add the marinated chicken to the pan in a single layer. Cook for 5-7 minutes, stirring occasionally until browned and cooked through. Remove the chicken from the pan and set it aside.

        Sauté the Vegetables: In the same pan, add the minced garlic and ginger, sautéing for about 30 seconds until fragrant. Add the sliced bell peppers, broccoli florets, and julienned carrot. Stir-fry for 4-5 minutes until the vegetables are vibrant and slightly tender.

          Combine Everything: Return the chicken to the pan with the vegetables. Pour in the remaining soy sauce, oyster sauce (if using), and hoisin sauce. Stir to combine all ingredients.

            Thicken the Sauce: Pour the cornstarch-water mixture into the pan, stirring constantly until the sauce thickens and bubbles for about 1-2 minutes. Adjust seasoning with additional salt and pepper if desired.

              Serve: On a plate, serve the stir-fry over a bed of cooked rice. Garnish with chopped green onions and sesame seeds.
