1 lb large shrimp, peeled and deveined

1 cup jasmine rice

2 cups vegetable or chicken broth (for cooking rice)

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (optional for heat)

Zest and juice of 2 lemons

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 cup baby spinach

Fresh parsley or basil, chopped (for garnish)

Cook the Rice: In a medium saucepan, bring the vegetable or chicken broth to a boil. Add the jasmine rice, reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the rice is tender and the broth is absorbed. Remove from heat and let it sit covered for an additional 5 minutes, then fluff with a fork.

    Prepare the Shrimp: While the rice is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes (if using). Sauté for about 1 minute, until fragrant, being careful not to burn the garlic.

      Add Shrimp and Seasoning: Increase the heat to medium-high and add the shrimp to the skillet. Season with salt and pepper, oregano, thyme, lemon zest, and lemon juice. Cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque.
