4 salmon fillets (about 6 oz each)

1 lb fresh asparagus, trimmed

3 tablespoons olive oil, divided

Juice of 2 lemons

Zest of 1 lemon

3 cloves garlic, minced

2 teaspoons fresh rosemary, finely chopped (or 1 teaspoon dried)

2 teaspoons fresh thyme, finely chopped (or 1 teaspoon dried)

Salt and pepper to taste

Lemon wedges for serving

Fresh herbs for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a small bowl, whisk together 2 tablespoons of olive oil, lemon juice, lemon zest, minced garlic, rosemary, thyme, salt, and pepper.

      Marinate the Salmon: Place the salmon fillets in a large resealable plastic bag or a shallow dish. Pour half of the marinade over the salmon, ensuring each fillet is well-coated. Let it marinate for 15 minutes at room temperature.

        Toss the Asparagus: While the salmon is marinating, place the trimmed asparagus on a baking sheet. Drizzle with the remaining tablespoon of olive oil, and season with salt and pepper. Toss to coat evenly.

          Bake the Asparagus: Roast the asparagus in the preheated oven for 5 minutes.

            Add the Salmon: After the asparagus has roasted for 5 minutes, remove the baking sheet from the oven. Place the marinated salmon fillets on top of the asparagus. Drizzle any leftover marinade over the salmon.

              Finish Baking: Return the baking sheet to the oven and bake for an additional 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).

                Serve: Remove from the oven and let it rest for a couple of minutes. Garnish with fresh herbs, if desired, and serve with lemon wedges on the side.
