Quick Lemon Garlic Shrimp and Broccoli Bowls

1 lb large shrimp, peeled and deveined

2 cups broccoli florets

4 cloves garlic, minced

1 lemon (zested and juiced)

3 tablespoons olive oil

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

1 cup cooked rice (white or brown)

Fresh parsley, chopped (for garnish)

Prepare the Ingredients: Rinse the shrimp and pat them dry with paper towels. Chop the broccoli into bite-sized pieces and set aside.

    Cook the Broccoli: In a large skillet, add 1 tablespoon of olive oil and heat over medium heat. Add the broccoli florets and sauté for 3-4 minutes until they turn bright green but are still crisp. Season with salt and pepper. Remove the broccoli from the skillet and set aside.

      Sauté the Shrimp: In the same skillet, add the remaining 2 tablespoons of olive oil. Add minced garlic and red pepper flakes, and sauté for about 30 seconds until fragrant. Then, add the shrimp, salt, pepper, and lemon zest to the skillet. Cook for about 2-3 minutes on each side until the shrimp are pink and opaque.

        Combine: Once the shrimp are cooked, return the broccoli to the skillet. Squeeze the lemon juice over the mixture and stir gently to combine everything, allowing it to heat through for another minute.

          Serve: In serving bowls, layer the cooked rice, and top it with the lemon garlic shrimp and broccoli mixture. Garnish with fresh chopped parsley and an extra lemon wedge on the side if desired.
