Quick Beef Tacos with Fresh Salsa

For the Tacos:

1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder

½ tsp paprika

Salt and pepper, to taste

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup shredded cheese (cheddar or Mexican blend)

1 avocado, sliced

Lime wedges, for serving

For the Fresh Salsa:

2 medium tomatoes, diced

1 small red onion, finely chopped

1 jalapeño, finely chopped (seeds removed for less heat)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt, to taste

Instructions
 

Prepare the Salsa:

    - In a mixing bowl, combine the diced tomatoes, chopped red onion, jalapeño, and cilantro.

      - Squeeze the lime juice over the mixture, season with salt, and toss everything together. Set aside to let the flavors meld.

        Cook the Beef:

          - In a large skillet, heat a drizzle of oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes.

            - Add the minced garlic and cook for an additional 30 seconds until fragrant.

              - Increase the heat to medium-high, add the ground beef, and cook until browned, breaking it up with a spatula as it cooks, about 5-7 minutes. Drain excess fat if necessary.

                Season the Beef:

                  - Sprinkle in the cumin, chili powder, paprika, salt, and pepper. Mix well to combine and cook for an additional 2 minutes. Remove from heat.

                    Warm the Tortillas:

                      - In a separate skillet, warm the tortillas over medium heat for about 30 seconds on each side until pliable. You can also wrap them in aluminum foil and heat them in the oven at 350°F (175°C) for 10 minutes.

                        Assemble the Tacos:

                          - On each warm tortilla, place a generous scoop of the seasoned beef. Top with shredded lettuce, cheese, and slices of avocado.

                            - Add a spoonful of the fresh salsa on top of each taco.

                              Serve and Enjoy:
