For the Beef Tacos:

1 lb ground beef (80% lean)

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup shredded cheddar cheese

¼ cup sour cream (optional)

Lime wedges, for serving

For the Fresh Avocado Salsa:

2 ripe avocados, diced

1 medium tomato, diced

1 small red onion, finely chopped

1 jalapeño, seeds removed and finely chopped (optional)

Juice of 1 lime

2 tablespoons fresh cilantro, chopped

Salt, to taste

Cook the Beef: In a large skillet over medium heat, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes. Add the ground beef, breaking it apart with a spatula. Cook until browned, about 5-6 minutes.

    Season the Beef: Stir in the chili powder, cumin, smoked paprika, salt, and pepper. Mix well and cook for another 2-3 minutes until the spices are fragrant. Remove from heat and set aside.

      Make the Avocado Salsa: In a medium bowl, combine the diced avocados, tomato, red onion, jalapeño (if using), lime juice, cilantro, and salt. Gently toss until everything is well mixed, being careful not to mash the avocados. Set aside.

        Warm the Tortillas: In a dry skillet over medium-high heat, warm the tortillas for about 30 seconds on each side until they are soft and pliable. Keep them covered in a clean kitchen towel to retain warmth.
