1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, diced

1 teaspoon dried thyme

1 teaspoon dried parsley

1 bay leaf

6 cups low-sodium chicken broth

2 cups rotisserie chicken, shredded

8 oz egg noodles

Salt and pepper to taste

Fresh parsley for garnish (optional)

Heat the Olive Oil: In a large pot, heat the olive oil over medium heat. Add the diced onion, and sauté for about 3 minutes until translucent.
