1 cup pumpkin puree (fresh or canned)

1/2 cup heavy cream

3 large eggs, separated

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

A pinch of salt

Butter (for greasing ramekins)

Powdered sugar (for dusting)

Preheat the Oven: Preheat your oven to 375°F (190°C). Prepare four 6-ounce ramekins by buttering the insides generously and placing them in a larger baking dish or roasting pan.

    Prepare the Soufflé Base: In a mixing bowl, combine the pumpkin puree, heavy cream, egg yolks, granulated sugar, vanilla extract, ground cinnamon, nutmeg, ginger, and salt. Whisk until the mixture is smooth and well combined.

      Beat the Egg Whites: In a separate clean bowl, use an electric mixer to beat the egg whites until soft peaks form. Gradually add a tablespoon of sugar and continue beating until stiff peaks form.

        Fold the Mixtures: Gently fold a third of the whipped egg whites into the pumpkin mixture to lighten it. Then, painstakingly fold in the remaining egg whites until just combined. Be careful not to deflate the egg whites too much to keep the soufflé airy.

          Fill the Ramekins: Spoon the soufflé mixture into the prepared ramekins, filling them about three-quarters full. Smooth the tops with a spatula.

            Prepare for Baking: Place the filled ramekins into the prepared baking dish. Carefully pour hot water into the baking dish until it reaches halfway up the sides of the ramekins, creating a water bath for even baking.

              Bake: Bake in the preheated oven for 25-30 minutes, or until the soufflés are puffed up and golden brown on top.

                Serve: Remove the baking dish from the oven, and let the soufflés sit for a minute. Dust the tops lightly with powdered sugar before serving. Enjoy your Pumpkin Soufflé warm, as it will start to deflate shortly after coming out of the oven!
