Ingredients

1 cup pure pumpkin puree (canned or fresh)

1/2 cup unsweetened applesauce

1/2 cup brown sugar, packed

1/2 cup granulated sugar

1/2 cup melted coconut oil (or unsalted butter)

1 large egg

2 teaspoons vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/4 teaspoon salt

1 cup semisweet chocolate chips

1/2 cup chopped nuts (optional, e.g., walnuts or pecans)

Instructions

Preheat Your Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Mix Wet Ingredients: In a large mixing bowl, combine the pure pumpkin puree, applesauce, brown sugar, granulated sugar, melted coconut oil, egg, and vanilla extract. Use a whisk or electric mixer to blend until smooth and creamy.

Combine Dry Ingredients: In another bowl, whisk together the all-purpose flour, baking soda, baking powder, ground cinnamon, ground nutmeg, ground ginger, and salt until well blended.

Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the pumpkin mixture. Stir using a spatula or wooden spoon until just combined. Be careful not to overmix.

Fold in Chocolate Chips and Nuts: Gently fold in the semisweet chocolate chips and chopped nuts until evenly distributed throughout the dough.

Scoop the Dough: Use a cookie scoop or tablespoon to drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches of space between each cookie.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are just set and the tops look slightly cracked. They may feel soft in the center; they will firm up as they cool.

Cool the Cookies: Remove from the oven and allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.

Serve and Enjoy: Once cooled, enjoy your delightful pumpkin chocolate chip cookies with a glass of milk or your favorite warm beverage!
