Pear & Chocolate Tartlets

Ingredients
  

For the Tartlet Shells:

1 ½ cups all-purpose flour

¼ cup powdered sugar

½ tsp salt

½ cup unsalted butter, cold and cubed

1 large egg yolk

2-3 tbsp cold water

For the Chocolate Filling:

1 cup dark chocolate, chopped (60-70% cacao)

½ cup heavy cream

2 tbsp unsalted butter

1 tsp vanilla extract

1 large egg

1 tbsp sugar

For the Pear Topping:

2 ripe pears, peeled, cored, and thinly sliced

1 tbsp lemon juice

1 tbsp brown sugar

½ tsp cinnamon

Instructions
 

Prepare the Tartlet Shells:

    - In a food processor, combine the flour, powdered sugar, and salt. Add the cold butter and pulse until the mixture resembles coarse crumbs.

      - Add the egg yolk and 2 tablespoons of cold water. Pulse until the dough comes together; add more water if needed.

        - Form the dough into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.

          Preheat Oven:

            - Preheat your oven to 375°F (190°C).

              Roll and Bake the Tartlet Shells:

                - On a lightly floured surface, roll out the chilled dough to about 1/8 inch thick. Cut out circles to fit your tartlet pan or mini muffin tin (about 3 inches in diameter).

                  - Press the dough circles into the pans, trimming any excess, and poke holes in the bottom with a fork.

                    - Bake for 10-12 minutes until lightly golden. Remove from the oven and let them cool.

                      Prepare the Chocolate Filling:

                        - In a saucepan over medium heat, combine the heavy cream and butter. Once heated, add the chopped dark chocolate and stir until smooth and melted.

                          - Remove from heat and stir in the vanilla extract. Allow to cool for a few minutes, then whisk in the egg and sugar until well combined.

                            Prepare the Pear Topping:

                              - In a bowl, toss the thinly sliced pears with lemon juice, brown sugar, and cinnamon. Let sit for about 10 minutes to soften.

                                Assemble the Tartlets:

                                  - Once the tartlet shells have cooled, pour the chocolate filling into each shell, filling them about 2/3 of the way full.

                                    - Gently place slices of prepared pears on top of the chocolate filling.

                                      Bake Again:

                                        - Return the tartlets to the oven and bake for an additional 15-18 minutes, or until the chocolate filling is set and slightly puffed.

                                          Cool and Serve:

                                            - Allow the tartlets to cool in the pan for about 10 minutes, then carefully transfer to wire racks to cool completely.

                                              - Serve warm or at room temperature. Optionally, dust with powdered sugar before serving.
