4 medium ripe pears, peeled, cored, and sliced

2 cups fresh blueberries

1 tablespoon lemon juice

1/3 cup granulated sugar (adjust based on sweetness of fruits)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 tablespoon cornstarch

1 cup all-purpose flour

1/2 cup rolled oats

1/2 cup packed brown sugar

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1/4 cup milk (or almond milk)

1 teaspoon vanilla extract (for the topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Filling: In a large mixing bowl, combine the sliced pears and blueberries. Add the lemon juice, granulated sugar, vanilla extract, cinnamon, and cornstarch. Toss well to coat the fruit evenly. Pour the fruit mixture into a greased 9x13 inch baking dish.

      Prepare the Topping: In a separate bowl, mix the flour, rolled oats, brown sugar, baking powder, and salt. Stir until well combined. Pour in the melted butter and milk, along with the additional teaspoon of vanilla extract. Mix until just combined – the batter may be lumpy, and that’s okay!

        Assemble the Cobbler: Drop spoonfuls of the topping mixture over the fruit filling. Don’t worry about covering the entire surface; it's fine for some fruit to peek through.

          Bake the Cobbler: Bake in the preheated oven for 35-40 minutes or until the topping is golden brown and the fruit is bubbling.

            Cool and Serve: Once done, remove from the oven and let it cool for about 10-15 minutes. Serve warm, optionally topped with a scoop of vanilla ice cream or a dollop of whipped cream.
