1/2 cup natural peanut butter (creamy or crunchy)

1/4 cup honey or maple syrup

1/2 cup unsweetened shredded coconut

1/4 cup ground flaxseed

1/2 teaspoon vanilla extract

1/4 cup mini chocolate chips (optional)

Mix the Base: In a large mixing bowl, combine the rolled oats, peanut butter, honey (or maple syrup), and vanilla extract. Stir well until all the ingredients are thoroughly combined.

    Add Texture: To the mixture, add the shredded coconut, ground flaxseed, and sea salt. If you’re using chocolate chips, fold them in at this stage. Mix everything until evenly distributed.

      Form the Bites: Using your hands, take small portions of the mixture and roll them into bite-sized balls, about 1 inch in diameter. If the mixture is too sticky, dampening your hands slightly can help.

        Chill: Place the energy bites on a parchment-lined baking sheet or a plate. Once all bites are formed, refrigerate them for at least 30 minutes to help them firm up.
