2 ripe peaches, pitted and sliced

2 cups broccoli florets

1 red bell pepper, sliced

1 cup snap peas, trimmed

1 medium carrot, julienned

1/2 onion, thinly sliced

3 cloves garlic, minced

2 tablespoons fresh ginger, minced

3 tablespoons soy sauce (or tamari for gluten-free)

2 tablespoons sesame oil

1 tablespoon honey or maple syrup

1 tablespoon rice vinegar

1 teaspoon cornstarch mixed with 2 tablespoons water (optional, for thickening)

Sesame seeds and chopped green onions for garnish

Instructions
 

Prepare the Ingredients: Wash and slice all vegetables and fruits as indicated in the ingredient list. Make sure to have everything ready before you start cooking.

    Make the Sauce: In a small bowl, whisk together the soy sauce, sesame oil, honey (or maple syrup), rice vinegar, and cornstarch mixture (if using). Set aside.

      Heat the Wok: In a large wok or skillet, heat 1 tablespoon of sesame oil over medium-high heat until shimmering.

        Sauté Aromatics: Add the minced garlic and ginger to the wok, stirring constantly for about 30 seconds until fragrant.

          Cook the Vegetables: Add the onion and carrot first, sautéing for about 2-3 minutes until they start to soften. Follow with broccoli, snap peas, and red bell pepper, cooking for another 3-4 minutes until vibrant in color and tender-crisp.
