Peach Glazed Tofu

Ingredients
  

1 block (14 oz) firm tofu, pressed and drained

1 cup fresh peaches, peeled and diced

1/4 cup peach preserves

2 tablespoons soy sauce

1 teaspoon rice vinegar

1 teaspoon cornstarch

2 tablespoons water

1 tablespoon olive oil

1 teaspoon garlic, minced

1 teaspoon fresh ginger, minced

Salt and pepper, to taste

Fresh mint leaves, for garnish (optional)

Instructions
 

Prepare the Tofu: Slice the pressed tofu into 1/2 inch thick slabs. Pat dry with a paper towel, seasoning both sides lightly with salt and pepper.

    Make the Peach Glaze: In a medium saucepan, combine the diced peaches, peach preserves, soy sauce, rice vinegar, and minced garlic and ginger over medium heat. Stir occasionally and allow it to simmer for about 5-7 minutes until the peaches soften and the mixture thickens slightly.

      Thicken the Sauce: In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Stir this mixture into the peach sauce and cook for an additional 2-3 minutes until the sauce thickens to your desired consistency. Remove from heat and set aside.

        Cook the Tofu: In a large skillet, heat the olive oil over medium-high heat. Add the tofu slabs to the skillet and cook for about 4-5 minutes on each side until golden and crispy.

          Glaze the Tofu: Pour the peach glaze over the cooked tofu, gently flipping the tofu to coat thoroughly. Let it simmer for another 2 minutes to allow the flavors to meld together.

            Serve: Transfer the glazed tofu to a serving plate, garnishing with fresh mint leaves if you wish. Serve immediately with steamed rice or a fresh salad.
