Parmesan Chicken Spinach Quinoa Bake

Ingredients
  

1 cup quinoa, rinsed

2 cups chicken broth (or vegetable broth)

1 lb (450g) boneless, skinless chicken breasts, diced

2 cups fresh spinach, chopped

1 cup cherry tomatoes, halved

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

3 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed. Set aside.

      Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with salt, pepper, Italian seasoning, and red pepper flakes (if using). Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden and cooked through.

        Add Spinach and Garlic: Stir in the minced garlic and chopped spinach, cooking for an additional 2-3 minutes until the spinach wilts.

          Combine Ingredients: In a large mixing bowl, combine the cooked quinoa, sautéed chicken mixture, halved cherry tomatoes, and half of the mozzarella and Parmesan cheese. Mix well to combine all ingredients.

            Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch (or similar sized) baking dish. Spread it evenly.

              Topping: Sprinkle the remaining mozzarella and Parmesan cheese evenly over the top of the mixture.

                Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.

                  Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil (if desired) and serve warm.
