Ingredients

4 boneless, skinless chicken breasts (about 1.5 lbs)

Salt and pepper, to taste

1/2 cup all-purpose flour, for dredging

2 tablespoons olive oil

2 tablespoons unsalted butter

8 ounces cremini mushrooms, sliced

3 cloves garlic, minced

1 cup Marsala wine (sweet)

1 cup chicken broth

1 cup heavy cream

1 teaspoon dried thyme

1 tablespoon fresh parsley, chopped (for garnish)

Instructions

Prep the Chicken: Season the chicken breasts generously with salt and pepper. Dredge each piece in flour, shaking off the excess.

Sear the Chicken: In a large skillet over medium-high heat, add the olive oil. Once hot, add the chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Cook the Mushrooms: In the same skillet, melt the butter. Add the sliced mushrooms and sauté for 5-6 minutes, or until they are browned and tender.

Add Garlic: Stir in the minced garlic and sauté for an additional 30 seconds, until fragrant.

Deglaze with Wine: Pour in the Marsala wine, scraping the bottom of the skillet to release the brown bits. Let it simmer for about 2-3 minutes until reduced slightly.

Make the Sauce: Stir in the chicken broth and bring the mixture to a simmer. Add the heavy cream and thyme, stirring until well combined. Allow the sauce to simmer for another 3-5 minutes, until it thickens slightly.

Return Chicken to Pan: Return the seared chicken breasts to the skillet, coating them in the creamy Marsala sauce. Simmer for an additional 5 minutes, allowing the flavors to meld.

Serve: Garnish with freshly chopped parsley before serving. Use the creamy sauce over pasta, rice, or mashed potatoes for a complete meal.
