One-Pot Mexican Quinoa and Black Bean Bowl

Ingredients
  

1 cup quinoa, rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

1 cup corn kernels (fresh, frozen, or canned)

1 small onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 teaspoon cumin

1 teaspoon chili powder

½ teaspoon smoked paprika

½ teaspoon salt (to taste)

¼ teaspoon black pepper

2 cups vegetable broth or water

1 tablespoon olive oil

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Avocado slices (for serving)

Optional toppings: shredded cheese, sour cream, jalapeños

Instructions
 

Prepare the Base: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and bell pepper. Sauté for about 3-4 minutes until they are softened.

    Flavor It Up: Add the minced garlic, cumin, chili powder, smoked paprika, salt, and black pepper to the pot. Cook while stirring for another minute until the spices are fragrant.

      Combine the Ingredients: Stir in the rinsed quinoa, black beans, diced tomatoes with their juices, corn, and vegetable broth. Mix well to combine all the ingredients.

        Cook the Quinoa: Bring the mixture to a boil, then reduce the heat to low. Cover the pot with a lid and let simmer for about 15-20 minutes, or until the quinoa is cooked and has absorbed most of the liquid. Fluff with a fork once done.

          Add Freshness: Remove from heat and stir in the lime juice. Adjust seasoning if necessary.
