One-Pan Zesty Lemon Garlic Shrimp

Ingredients
  

1 lb (450g) large shrimp, peeled and deveined

3 tablespoons olive oil

4 cloves garlic, minced

Zest and juice of 2 lemons

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper, to taste

1 cup cherry tomatoes, halved

1 cup baby spinach

1/4 cup fresh parsley, chopped

Lemon wedges, for serving

Instructions
 

Marinate the Shrimp: In a medium bowl, combine the shrimp with 2 tablespoons of olive oil, minced garlic, lemon zest, lemon juice, red pepper flakes, salt, and black pepper. Toss to coat and let marinate for about 15 minutes.

    Heat the Pan: In a large skillet over medium-high heat, add the remaining tablespoon of olive oil. Once hot, add the marinated shrimp, making sure not to overcrowd the pan. Cook for about 2-3 minutes on each side until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add the halved cherry tomatoes and cook for about 2-3 minutes until they start to soften. Add the baby spinach and cook until wilted, about 1-2 minutes.

        Combine and Finish: Return the cooked shrimp back into the skillet with the tomatoes and spinach. Toss everything together and cook for an additional minute to heat through. Adjust seasoning with more salt and pepper if needed.

          Serve: Remove from heat and transfer to a serving platter. Garnish with chopped parsley and serve with lemon wedges on the side.
