4 boneless, skinless chicken breasts

1/4 cup olive oil

3 tablespoons fresh lemon juice (about 1 lemon)

4 cloves garlic, minced

1 tablespoon fresh thyme leaves

1 tablespoon fresh rosemary, chopped

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 lemon, sliced

1 cup cherry tomatoes, halved

1 cup green beans, trimmed

Fresh parsley, for garnish

Instructions
 

Marinate the Chicken: In a large bowl, whisk together the olive oil, lemon juice, minced garlic, thyme, rosemary, oregano, salt, and pepper. Add the chicken breasts, ensuring they are well coated in the marinade. Cover and let it marinate in the refrigerator for at least 30 minutes, preferably up to 2 hours.

    Preheat the Oven: Preheat your oven to 400°F (200°C).

      Prepare the Pan: In a large oven-safe skillet or baking dish, layer the lemon slices, cherry tomatoes, and green beans.

        Cook the Chicken: Remove the marinated chicken from the fridge and place them on top of the layered vegetables in the skillet. Make sure to pour any remaining marinade over the chicken for added flavor.

          Bake: Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/75°C) and the vegetables are tender.

            Serve: Once done, remove from the oven and let it rest for a couple of minutes. Garnish with fresh parsley before serving.
