Ingredients

12 oz (340g) penne pasta

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups baby spinach, packed

1 cup heavy cream

1 cup chicken broth (low sodium)

1/2 cup grated Parmesan cheese

3 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Heat the Olive Oil: In a large skillet or pan over medium-high heat, add the olive oil. Once hot, add the chicken pieces, seasoning with salt and black pepper. Cook for about 5-7 minutes or until the chicken is browned and cooked through. Remove the chicken from the pan and set aside.

Sauté Garlic: In the same pan, reduce the heat to medium and add the minced garlic. Sauté for about 1 minute, until fragrant.

Add Broth and Cream: Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a gentle simmer.

Cook the Pasta: Add the penne pasta and Italian seasoning to the pan. Stir well to ensure the pasta is submerged in the liquid. Cover the pan and cook for about 12-15 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid.

Combine Everything: Once the pasta is cooked, return the chicken to the pan. Stir in the baby spinach and grated Parmesan cheese. Cook for another 2-3 minutes until the spinach wilts and the cheese melts into a creamy sauce.

Finishing Touches: Taste and adjust seasoning with more salt, pepper, or red pepper flakes if desired. Give everything a good stir to mix before serving.

Serve: Garnish with freshly chopped parsley and additional Parmesan if desired. Enjoy your comforting one-pan meal!
