One-Pan Cheesy Comfort Mac & Pumpkin for Cozy Nights

8 oz elbow macaroni

2 cups pumpkin puree (canned or fresh)

2 cups vegetable or chicken broth

1 cup milk

2 cups shredded cheddar cheese

1 cup grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

1/2 tsp ground nutmeg

Salt and pepper to taste

1 tbsp olive oil

1/2 cup breadcrumbs (optional for topping)

Fresh parsley for garnish (optional)

Instructions
 

In a large skillet or a deep pan, heat the olive oil over medium heat.

    Add the elbow macaroni, pumpkin puree, broth, and milk to the pan. Stir everything together until well combined.

      Season with garlic powder, onion powder, ground nutmeg, salt, and pepper. Bring the mixture to a gentle boil, then reduce the heat to a simmer.

        Cook, stirring occasionally, for about 8-10 minutes, or until the pasta is al dente and most of the liquid is absorbed.

          Once the pasta is cooked, reduce the heat to low and stir in the cheddar cheese and half of the Parmesan cheese until melted and creamy.

            If you'd like a crunchy topping, sprinkle the breadcrumbs and the remaining Parmesan cheese evenly over the macaroni.

              Turn on the broiler in your oven and place the skillet under it for 2-3 minutes until the top is golden and bubbly. Watch closely to avoid burning!

                Remove from the oven and let it sit for a couple of minutes. If desired, garnish with fresh parsley before serving.
