1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 cup uncooked long-grain white rice

2 cups beef broth

1 can (15 oz) diced tomatoes with green chilies

1 cup frozen corn

1 cup shredded cheddar cheese (divided)

1 tsp paprika

1 tsp cumin

1/2 tsp chili powder

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Cook the Beef: In a large skillet or a deep frying pan over medium heat, add the ground beef. Cook until browned and crumbled, about 5-7 minutes. Drain any excess fat.

    Add Veggies: Stir in the diced onion and minced garlic. Sauté until the onion becomes translucent, around 3-4 minutes.

      Combine Ingredients: Add the uncooked rice to the skillet. Stir well to combine it with the beef mixture.

        Add Liquids: Pour in the beef broth and the diced tomatoes with their juices. Mix in the frozen corn, paprika, cumin, chili powder, salt, and pepper. Bring the mixture to a boil.

          Simmer: Once boiling, reduce the heat to low, cover the pan, and let it simmer for about 20-25 minutes, or until the rice is cooked and has absorbed the liquid.

            Add Cheese: Remove the pan from heat. Stir in 3/4 cup of the shredded cheddar cheese until melted and well incorporated. Taste and adjust seasoning if necessary.

              Garnish and Serve: Sprinkle the remaining cheese on top, cover again, and let it sit for an additional 5 minutes for the cheese to melt. Garnish with fresh parsley if desired, then serve hot.
