No-Bake Peanut Butter Cups

1 cup creamy peanut butter (natural, unsweetened)

½ cup powdered sugar

1 teaspoon vanilla extract

1 cup graham cracker crumbs

1 cup dark chocolate chips (or milk chocolate, depending on preference)

2 tablespoons coconut oil (or unsalted butter)

Prepare the Peanut Butter Mixture: In a mixing bowl, combine the creamy peanut butter, powdered sugar, and vanilla extract. Stir well until the mixture is smooth and fully combined. Add the graham cracker crumbs gradually and mix until a thick, dough-like consistency forms. Set aside.

    Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each session until fully melted and smooth. Be careful not to overheat as chocolate can burn easily.

      Assemble the Cups: Line a muffin tin with paper liners. Pour about a tablespoon of melted chocolate into the bottom of each liner, using the back of a spoon to spread it out evenly. Place the tray in the fridge for about 10-15 minutes to set.

        Add the Peanut Butter Layer: Once the chocolate has set, take the muffin tin out of the fridge. Scoop about 1 tablespoon of the peanut butter mixture and flatten it slightly, then place it on top of the set chocolate layer in each liner. Press down gently to ensure it sticks but doesn’t overflow.

          Top with More Chocolate: Pour another tablespoon of melted chocolate on top of the peanut butter layer, making sure to cover it completely. Use a spoon to smooth it out if necessary.

            Final Set: Place the muffin tin back in the fridge for another 20-30 minutes, or until the chocolate has fully hardened.

              Serve and Enjoy: Once set, remove the peanut butter cups from the muffin tin and peel off the liners. Serve immediately or store in an airtight container in the fridge for up to a week.
