Ingredients
  

1 cup rolled oats

1/2 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1/4 cup unsweetened cocoa powder

1/4 cup freeze-dried strawberries, crushed

1/4 cup shredded unsweetened coconut

1/4 cup mini chocolate chips

1 teaspoon vanilla extract

A pinch of salt

Instructions
 

Mix the Base: In a large mixing bowl, combine the rolled oats, almond butter, honey (or maple syrup), and vanilla extract. Stir until well combined and a sticky mixture forms.

    Divide the Mixture: Split the mixture into three equal parts in separate bowls. This will form your chocolate, strawberry, and vanilla layers.

      Chocolate Layer: In the first bowl, add the cocoa powder and a pinch of salt. Mix thoroughly until all the cocoa is well incorporated.

        Strawberry Layer: In the second bowl, add the crushed freeze-dried strawberries and shredded coconut. Mix until evenly distributed.

          Vanilla Layer: Keep the third part as is for the vanilla flavor.

            Layering: Take a mini muffin tin or small silicone molds. Start by adding teaspoons of the chocolate mixture to the bottom, followed by a layer of the vanilla mixture, and then top with the strawberry mixture. Press down gently to ensure they hold together. Repeat until all the mixtures are used up.

              Chill: Place the filled molds in the refrigerator for at least 30 minutes to firm up.

                Serve: Gently remove the energy bites from the molds. Store in an airtight container in the fridge for up to a week.
