Ingredients

1 cup cream cheese, softened

1 cup heavy cream

1/2 cup powdered sugar

1/4 cup fresh lemon juice

Zest of 2 lemons

1 teaspoon vanilla extract

1 cup crushed graham crackers (plus extra for layering)

1/4 cup unsalted butter, melted

Fresh lemon slices and mint leaves for garnish (optional)

Instructions

Prepare the Crust: In a medium bowl, combine crushed graham crackers and melted butter. Mix until the crackers are fully coated and the mixture resembles wet sand. Set aside.

Make the Cheesecake Filling: In a separate large mixing bowl, beat the softened cream cheese with a hand mixer until smooth and creamy. Add the powdered sugar, lemon juice, lemon zest, and vanilla extract. Continue to mix until fully combined and there are no lumps.

Whip the Cream: In another mixing bowl, whip the heavy cream until stiff peaks form. This will give your cheesecake parfaits a light and airy texture.

Combine Ingredients: Gently fold the whipped cream into the lemon cheesecake mixture, being careful not to deflate the whipped cream. Do this in batches, allowing for a smooth consistency.

Assemble the Parfaits: In a clear parfait or dessert glass, start by adding a layer of the graham cracker crust mixture, followed by a layer of the lemon cheesecake filling. Repeat the layers until the glasses are filled, finishing with a layer of cheesecake at the top.

Chill: Cover the assembled parfaits with plastic wrap and refrigerate for at least 2 hours (or overnight) to allow the flavors to meld and the parfaits to set.

Serve: Just before serving, garnish with extra crushed graham crackers, fresh lemon slices, and mint leaves if desired.
