Ingredients

1 cup creamy peanut butter

1 cup honey or maple syrup

2 cups rolled oats

1/2 cup unsweetened cocoa powder

1 teaspoon vanilla extract

1 pinch of salt

1 cup dark chocolate chips (dairy-free if preferred)

2 tablespoons coconut oil

Instructions

Prepare Base Mixture: In a large mixing bowl, combine the creamy peanut butter and honey (or maple syrup). Mix until smooth and well blended.

Incorporate Dry Ingredients: Slowly add the rolled oats, unsweetened cocoa powder, vanilla extract, and a pinch of salt to the peanut butter mixture. Stir until all ingredients are uniformly combined. You should have a thick, sticky mixture.

Press into Pan: Line an 8x8 inch baking dish with parchment paper, allowing some paper to hang over the edges for easy removal later. Press the oatmeal mixture firmly into the bottom of the dish, spreading it evenly across the surface with a spatula. Set aside.

Melt Chocolate Topping: In a small saucepan over low heat, combine dark chocolate chips and coconut oil. Stir continuously until melted and smooth. Remove from heat.

Top the Bars: Pour the melted chocolate over the pressed oat mixture in the baking dish. Use a spatula to spread the chocolate evenly across the top.

Chill: Place the baking dish in the refrigerator for at least 1-2 hours, or until the bars are firm and set.

Cut and Serve: Once the bars are set, lift them out of the dish using the parchment paper. Cut them into squares or rectangles, and enjoy!
