1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup sugar

1 (8 oz) package cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup cherry pie filling (or fresh cherries chopped)

½ cup heavy whipping cream

1 tablespoon cherry juice (optional for extra flavor)

Fresh mint leaves for garnish

Prepare the Crust: In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until the crumb mixture resembles wet sand. Press this mixture evenly into the bottom of a 9-inch square baking pan or a similar dish. Use the back of a measuring cup or your fingers to pack it tightly. Refrigerate for at least 15 minutes to set.

    Make the Creamy Filling: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in the powdered sugar and continue mixing until fully incorporated. Mix in the vanilla extract until fully combined.

      Whip the Cream: In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth and combined.

        Combine Filling and Cherries: If you’re using cherry juice, add it to the filling mixture for added cherry flavor. Gently fold in the cherry pie filling, or fresh cherries if using, being careful not to overmix. You want to maintain the pretty swirl of cherries.

          Layer the Sliders: Pour the cherry cream cheese mixture over the chilled graham cracker crust in the baking pan. Spread it evenly and smooth the top with a spatula. Refrigerate again for at least 2 hours, or until set.
