Ingredients

1 cup Biscoff cookie crumbs

¼ cup unsalted butter, melted

8 oz cream cheese, softened

½ cup powdered sugar

1 tsp vanilla extract

1 cup heavy whipping cream

½ cup Biscoff spread

Additional Biscoff cookies for garnish

Optional: Chocolate shavings or caramel drizzle for decoration

Instructions

Prepare the Crust: In a medium bowl, combine the Biscoff cookie crumbs and melted butter. Stir until the crumbs are fully coated. Divide the mixture evenly among the jars you’re using, pressing it down firmly to create a crust layer at the bottom of each jar.

Make the Cheesecake Filling: In a large mixing bowl, use a hand mixer to beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until fully incorporated and creamy.

Whip the Cream: In another bowl, whip the heavy cream until medium peaks form. Gently fold the whipped cream into the cream cheese mixture. Be careful not to deflate the whipped cream; the goal is to keep the filling light and airy.

Add the Biscoff Spread: Gently fold in the Biscoff spread until well combined, making sure to keep some swirls for visual appeal.

Layer the Cheesecake: Spoon the cheesecake filling into the jars over the crusts, filling them just below the top. You can alternate layers of cheesecake filling and a small drizzle of extra Biscoff spread for added flavor and presentation.

Chill: Cover the jars with their lids (or plastic wrap) and refrigerate for at least 4 hours, preferably overnight. This allows the cheesecake to set and the flavors to meld beautifully.

Serve: Before serving, crush a few Biscoff cookies and sprinkle them over the top of each jar. You can also add a drizzle of chocolate or caramel for an indulgent touch!
