1 ½ cups rolled oats

1 cup almond flour

½ cup shredded coconut (unsweetened)

½ cup maple syrup or agave nectar

½ cup coconut oil, melted

Zest of 2 limes

½ cup fresh lime juice (about 3 limes)

1 teaspoon vanilla extract

¼ teaspoon salt

½ cup chopped nuts (walnuts or pistachios), optional for added crunch

Extra lime zest and shredded coconut for garnish

Instructions
 

Prepare the Base:

    - In a large mixing bowl, combine the rolled oats, almond flour, and shredded coconut. Mix well until the dry ingredients are evenly distributed.

      Combine Wet Ingredients:

        - In another bowl, whisk together the melted coconut oil, maple syrup (or agave nectar), lime juice, lime zest, vanilla extract, and salt until smooth and well-combined.

          Mix Everything Together:

            - Pour the wet mixture over the dry ingredients. Stir thoroughly until all the ingredients are well combined. If you are adding chopped nuts, fold them into the mixture.

              Line the Pan:

                - Line an 8x8-inch (or similar) baking pan with parchment paper, leaving some overhang on the sides for easy removal.

                  Press Into Pan:

                    - Transfer the mixture into the prepared pan. Using a spatula or your hands, press the mixture down firmly and evenly to create a compact layer.

                      Chill and Set:
