1 cup shredded cheese (cheddar or Monterey Jack)

1/2 cup black beans, rinsed and drained

1/2 cup bell peppers (red, yellow, or green), diced

1/4 cup red onion, finely chopped

1/2 cup corn (fresh or canned)

1/4 tsp cumin

1/4 tsp chili powder

Salt and pepper to taste

Olive oil or cooking spray (for toasting)

Prepare the Veggie Filling: In a mixing bowl, combine the black beans, diced bell peppers, red onion, corn, cumin, chili powder, salt, and pepper. Stir until everything is well mixed.
