1 can (5 oz) tuna in water, drained and flaked

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1/4 cup diced red onion

1/4 cup chopped celery

1/2 cup shredded cheddar cheese

1 tablespoon fresh lemon juice

Salt and pepper, to taste

4 small flour tortillas (about 6 inches)

1 tablespoon olive oil or melted butter

Optional garnish: fresh parsley or dill

Prepare the Tuna Mixture: In a medium bowl, combine the flaked tuna, mayonnaise, Dijon mustard, diced red onion, chopped celery, and lemon juice. Mix until well combined. Season with salt and pepper to taste. Fold in the shredded cheddar cheese.

    Fill the Tortillas: Place a tortilla on a clean surface and spoon about 1/4 cup of the tuna mixture onto the center. Fold the sides in, then roll it up tightly from the bottom to create a pocket. Repeat with the remaining tortillas and fillings.

      Heat the Tortilla Pockets: In a large skillet, heat the olive oil or melted butter over medium heat. Once hot, place the stuffed tortilla pockets seam-side down in the skillet, working in batches if needed.
