Ingredients

1 cup sweet corn kernels (fresh or frozen)

1 cup shredded sharp cheddar cheese

1/2 cup all-purpose flour

1/2 cup cornmeal

2 large eggs

1/2 teaspoon baking powder

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/4 teaspoon black pepper

1/2 teaspoon salt

1/4 cup chopped fresh chives (optional)

Vegetable oil (for frying)

Sour cream or ranch dressing (for serving)

Instructions

Prepare the Corn Mixture: In a large mixing bowl, combine the sweet corn kernels, shredded cheddar cheese, and chopped chives (if using). Set aside.

Make the Batter: In another bowl, whisk together the flour, cornmeal, baking powder, garlic powder, onion powder, smoked paprika, black pepper, and salt. In a separate bowl, beat the eggs until smooth.

Combine Ingredients: Pour the beaten eggs into the corn mixture. Gradually add the dry ingredients to this mix, stirring until all is well combined and a thick batter forms.

Heat the Oil: In a deep frying pan or pot, add enough vegetable oil to cover the bottom by about 1 inch. Heat the oil over medium heat until it reaches about 350°F (175°C).

Fry the Poppers: Using a small scoop or tablespoon, carefully drop 1-2 tablespoons of the batter into the hot oil for each popper. Fry in batches for about 3-4 minutes on each side, or until golden brown and crispy. Ensure not to overcrowd the pan.

Drain and Serve: Once fried, transfer the poppers to a paper towel-lined plate to absorb excess oil. Serve warm with a side of sour cream or ranch dressing for dipping.
