1 cup graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

1 cup cream cheese, softened

1 cup sweetened condensed milk

1/2 cup fresh key lime juice (about 6-8 key limes)

1 tablespoon key lime zest

1 teaspoon vanilla extract

Prepare the Crust: In a medium bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until well combined. The mixture should resemble wet sand.

    Form the Crusts: Using a mini muffin tin or silicone baking cups, evenly distribute the crust mixture into each cup, pressing it firmly into the bottom and up the sides to form a mini pie crust.

      Chill the Crusts: Place the muffin tin or silicone cups in the refrigerator to chill for at least 15 minutes, allowing the crust to set.

        Make the Filling: In a large mixing bowl, combine the softened cream cheese, sweetened condensed milk, key lime juice, key lime zest, and vanilla extract. Use an electric mixer or a whisk to blend the mixture until it is smooth and creamy, ensuring there are no lumps.
