1 medium zucchini, finely diced

1 cup corn kernels (fresh or frozen)

1 teaspoon cumin powder

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

Salt and pepper to taste

1 cup shredded lettuce

1/2 cup diced tomatoes

1 avocado, sliced

1/2 cup crumbled feta cheese or vegan alternative

Fresh cilantro leaves for garnish

Cooking oil for frying (such as vegetable or olive oil)

Prepare the Tortillas: Heat about 1/4 cup of oil in a deep skillet over medium heat. Once the oil is hot, fry the mini corn tortillas one at a time for about 1-2 minutes on each side until golden and crispy. Drain on paper towels and set aside.
