1 can (15 oz) chickpeas, drained and rinsed

1 tablespoon olive oil

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon cumin

Salt and pepper to taste

1 head of butter lettuce or romaine, leaves separated

1 small cucumber, diced

1 small red bell pepper, diced

1/4 cup red onion, finely chopped

1 avocado, diced

1/4 cup fresh cilantro, chopped

1 lime, zested and juiced

Optional: crumbled feta cheese or diced jalapeños for topping

Instructions
 

Prepare the Chickpeas: Preheat your oven to 400°F (200°C). In a bowl, combine the drained chickpeas with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper. Toss until the chickpeas are well coated.

    Bake the Chickpeas: Spread the chickpeas evenly on a baking sheet lined with parchment paper. Bake for 25-30 minutes, or until they are golden brown and crispy, shaking the pan halfway through to ensure even cooking.
