1 lb chicken breast, diced

1 medium sweet potato, peeled and diced into small cubes

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

8 small corn tortillas

1 avocado, sliced

1/2 cup red cabbage, thinly sliced

1/4 cup fresh cilantro, chopped

Prepare the Sweet Potato: In a pot of boiling water, add the diced sweet potato and cook for about 8-10 minutes or until tender. Drain and set aside.
