Mini Apple Pies

2 large apples (Granny Smith or Honeycrisp), peeled, cored, and diced

1/2 cup brown sugar

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1 tablespoon lemon juice

1 tablespoon all-purpose flour

1 package of refrigerated pie crusts (or homemade if preferred)

1 egg (for egg wash)

1 tablespoon milk

1 tablespoon granulated sugar (for sprinkling)

Optional: Vanilla ice cream or whipped cream for serving

Preheat Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare Apple Filling: In a large bowl, combine the diced apples, brown sugar, cinnamon, nutmeg, lemon juice, and flour. Toss them until the apples are well coated; set aside to let the flavors meld.

      Roll Out Pie Crust: Unroll the pie crusts on a clean, floured surface. Using a round cookie cutter or a glass, cut out 4-inch circles from the crust.

        Fill Pastry Circles: Place a small spoonful of the apple filling in the center of each pastry circle, making sure not to overfill.

          Seal the Pies: Fold the dough over the filling to create a half-moon shape. Press the edges together using a fork to seal tightly. Repeat until all circles are filled and sealed.

            Prepare for Baking: In a small bowl, whisk the egg with the milk to create the egg wash. Brush the tops of each mini pie generously with the egg wash.

              Sprinkle Sugar: Lightly sprinkle granulated sugar on top of each pie for added sweetness and a lovely finish.

                Bake: Place the mini pies on a parchment-lined baking sheet. Bake in the preheated oven for 20-25 minutes or until golden brown.

                  Cool: Remove from the oven and let cool on a wire rack for about 5-10 minutes.
