Ingredients

1.5 lbs Brussels sprouts, trimmed and halved

1/4 cup olive oil

1/4 cup pure maple syrup

1 cup walnuts, roughly chopped

1 teaspoon sea salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon balsamic vinegar (optional)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

Prepare the Brussels Sprouts: In a large mixing bowl, combine the halved Brussels sprouts with olive oil, maple syrup, sea salt, black pepper, and garlic powder. Toss well until all the sprouts are evenly coated.

Add the Walnuts: Add the chopped walnuts to the bowl and give it another gentle toss to distribute the nuts among the Brussels sprouts.

Spread and Roast: Spread the Brussels sprouts and walnuts in an even layer on the prepared baking sheet. Make sure they have space between them for proper roasting.

Roasting Time: Place the baking sheet in the preheated oven and roast for 20-25 minutes, stirring halfway through to ensure even caramelization. The Brussels sprouts should be golden brown and crisp at the edges when done.

Add Balsamic (Optional): If desired, drizzle balsamic vinegar over the sprouts during the last 5 minutes of roasting to add an extra layer of flavor.

Finish and Garnish: Remove the baking sheet from the oven and allow the sprouts to cool slightly. Transfer to a serving dish and garnish with chopped fresh parsley.

Serve and Enjoy: Serve warm as a delicious side dish for your favorite main course!
