Ingredients

2 slices of sourdough bread

1 medium apple (such as Granny Smith or Honeycrisp), cored and thinly sliced

4 strips of crispy bacon

1 tablespoon pure maple syrup

1 tablespoon unsalted butter, softened

1/2 teaspoon cinnamon

1 cup shredded sharp cheddar cheese

1/4 cup creamy goat cheese

Salt and pepper to taste

Instructions

Roast the Apples:

    - Preheat your oven to 400°F (200°C).

      - In a bowl, toss the apple slices with maple syrup, cinnamon, salt, and pepper.

        - Spread the apple slices on a baking sheet lined with parchment paper and bake for about 10-12 minutes, or until tender and slightly caramelized. Remove from oven and set aside.

          Prepare the Bacon:

            - While the apples are roasting, cook the bacon in a skillet over medium heat until crispy. Transfer to a paper towel-lined plate to absorb excess grease.

              Assemble the Sandwich:

                - Spread softened butter on one side of each slice of sourdough bread.

                  - On the unbuttered side of one slice, layer half of the cheddar cheese, followed by the roasted apple slices, crispy bacon strips, goat cheese, and the remaining cheddar cheese. Top with the other slice of bread, buttered side up.

                    Grill the Sandwich:

                      - In the same skillet used for bacon, lower the heat to medium-low. Carefully place the sandwich in the skillet. Cook for about 3-4 minutes, or until the bottom slice is golden brown and the cheese begins to melt.

                        - Carefully flip the sandwich with a spatula, pressing down slightly to encourage melting. Cook for another 3-4 minutes on the other side until it is golden brown and the cheese is fully melted.

                          Serve:

                            - Remove the sandwich from the skillet and let it sit for a minute before slicing. This allows the cheese to set a bit. Cut in half and enjoy your Maple Roasted Apple Bacon Grilled Cheese!
