Ingredients

2 cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup granulated sugar

½ cup brown sugar, packed

½ cup unsalted butter, melted and cooled

2 large eggs

1 teaspoon vanilla extract

Zest of 2 lemons

⅓ cup fresh lemon juice

⅓ cup buttermilk

¼ cup poppy seeds

For the Lemon Glaze:

1 cup powdered sugar

2-3 tablespoons fresh lemon juice

Zest of 1 lemon (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish or line it with parchment paper for easy removal.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

Combine Sugars and Wet Ingredients: In a large mixing bowl, whisk together the granulated sugar, brown sugar, and melted butter. Add the eggs, vanilla extract, lemon zest, lemon juice, and buttermilk. Whisk until well combined.

Incorporate Dry Ingredients: Gradually add the dry ingredients to the wet mixture, and stir until just combined. Be careful not to overmix. Gently fold in the poppy seeds until evenly distributed.

Pour and Spread: Pour the batter into the prepared baking dish and spread it evenly. Use a spatula to smooth the top.

Bake: Bake in the preheated oven for 25-30 minutes or until the edges are lightly golden and a toothpick inserted in the center comes out clean.

Prepare the Glaze: While the muffin bars are baking, prepare the lemon glaze by whisking together the powdered sugar and lemon juice in a small bowl. Adjust the consistency by adding more lemon juice if it’s too thick or more sugar if it’s too thin.

Cool and Glaze: Once the muffin bars are done baking, let them cool in the pan for about 10 minutes. Remove them from the pan and place them on a wire rack to cool completely. Drizzle the glaze on top and garnish with lemon zest.

Cut and Serve: Once cooled and glazed, cut into squares or rectangles to serve. Enjoy your delicious Lemon Poppy Seed Muffin Bars!
