1/2 cup fresh lemon juice (about 2-3 lemons)

Zest of 1 lemon

1/4 cup honey

1/4 cup olive oil

3 cloves garlic, minced

1 teaspoon dried thyme (or 1 tablespoon fresh thyme)

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon soy sauce (optional for umami)

Fresh parsley, chopped (for garnish)

Prepare the Marinade: In a mixing bowl, whisk together the fresh lemon juice, lemon zest, honey, olive oil, minced garlic, dried thyme, salt, pepper, and soy sauce until well combined.

    Marinate the Chicken: Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring that all pieces are well coated. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 30 minutes to 2 hours for maximum flavor.

      Preheat the Oven: Preheat your oven to 400°F (200°C).

        Sear the Chicken: Heat a large oven-safe skillet over medium-high heat and add a splash of olive oil. Remove the chicken from the marinade (reserve the marinade for glazing) and sear the chicken breasts for 3-4 minutes on each side, until golden brown.
