4 medium flour tortillas

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup fresh spinach, chopped

1/2 cup bell pepper, diced (any color)

1/2 cup zucchini, diced

1/4 cup corn (canned or frozen)

1/4 teaspoon garlic powder

1/4 teaspoon cumin

1/4 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil (for cooking)

Optional: Salsa and sour cream for dipping

Instructions
 

Prep the Vegetables: Start by washing and chopping the spinach, bell pepper, and zucchini into small, bite-sized pieces. Set aside.

    Mix the Filling: In a large mixing bowl, combine the chopped spinach, bell pepper, zucchini, corn, garlic powder, cumin, paprika, salt, and pepper. Stir well until all the vegetables are evenly distributed.

      Assemble the Quesadillas: Lay one tortilla flat on a plate or clean surface. Sprinkle a generous amount of cheddar cheese on half of the tortilla. Follow with a layer of the vegetable mixture, and top with a layer of mozzarella cheese. Fold the tortilla in half to cover the filling. Repeat the process with the remaining tortillas.

        Cook the Quesadillas: Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Once the oil is hot, carefully place one folded quesadilla into the skillet. Cook for 3-4 minutes or until the underside is golden and slightly crispy. Flip and cook for an additional 3-4 minutes on the other side, until both sides are golden brown and the cheese is melted. Repeat for the other quesadillas, adding more olive oil if needed.

          Serve: Remove the quesadillas from the skillet and let them cool for a minute. Cut each quesadilla into triangles and serve warm with salsa and sour cream on the side for dipping.
