Honey Mustard Glazed Chicken and Broccoli

4 boneless, skinless chicken breasts

2 cups broccoli florets

1/4 cup Dijon mustard

1/4 cup honey

2 tablespoons olive oil

2 cloves garlic, minced

1 tablespoon apple cider vinegar

1 teaspoon smoked paprika

Salt and pepper, to taste

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Glaze: In a medium mixing bowl, whisk together the Dijon mustard, honey, olive oil, minced garlic, apple cider vinegar, smoked paprika, salt, and pepper until well combined.

    Marinate the Chicken: Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour half of the honey mustard glaze over the chicken, ensuring it's well coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes, allowing the flavors to penetrate the meat.

      Preheat the Oven: Preheat your oven to 400°F (200°C).

        Prepare the Broccoli: While the chicken marinates, prepare the broccoli. Steam or blanch the broccoli florets for about 3-4 minutes until bright green and slightly tender. Drain and set aside.

          Bake the Chicken: Remove the chicken from the marinade (discard the marinade). Place the chicken breasts in a baking dish and pour the remaining honey mustard glaze over the top. Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through (internal temperature of 165°F/75°C).

            Add the Broccoli: After about 15 minutes of baking, add the steamed broccoli around the chicken in the baking dish. This allows the broccoli to absorb some of the honey mustard flavor as it cooks.

              Broil for Extra Flavor (Optional): For a caramelized finish, switch the oven to broil for the last 3-5 minutes, staying close to ensure nothing burns.

                Serve and Garnish: Remove the baking dish from the oven. Let the chicken rest for a few minutes before slicing. Serve the glazed chicken alongside the roasted broccoli and garnish with chopped fresh parsley.
