Ingredients

2 pounds chicken drumsticks

1/4 cup honey

2 tablespoons freshly squeezed lime juice

1 tablespoon lime zest

3 cloves garlic, minced

1 teaspoon soy sauce

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Prepare the Marinade: In a medium mixing bowl, whisk together the honey, lime juice, lime zest, minced garlic, soy sauce, cumin, paprika, salt, and pepper until well combined.

Marinate the Drumsticks: Place the chicken drumsticks in a large resealable plastic bag or shallow dish. Pour the honey lime marinade over the chicken, ensuring all pieces are well coated. Seal the bag or cover the dish, and refrigerate for at least 1 hour, or preferably overnight to enhance the flavor.

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with foil for easy cleanup and place a wire rack on top (if available) to allow for even cooking.

Arrange the Drumsticks: Remove the chicken from the marinade and shake off any excess. Arrange the drumsticks evenly on the wire rack, spaced apart to ensure proper air circulation.

Bake the Drumsticks: Bake in the preheated oven for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is crispy and golden brown.

Baste for Extra Flavor: In the last 10 minutes of baking, brush the drumsticks with the leftover marinade for an extra burst of flavor.

Garnish and Serve: Once cooked, remove the drumsticks from the oven and let them rest for a few minutes. Garnish with fresh cilantro and serve with additional lime wedges on the side for a zesty kick.
