Ingredients

For the tofu:

14 oz firm tofu, pressed and cubed

3 tablespoons cornstarch

2 tablespoons vegetable oil

Salt and pepper, to taste

For the honey garlic sauce:

4 tablespoons honey

4 tablespoons soy sauce

2 tablespoons minced garlic (about 6 cloves)

1 tablespoon fresh ginger, grated

1 tablespoon rice vinegar

1 teaspoon sesame oil

For the rice bowl:

1 cup jasmine rice

2 cups water or vegetable broth

1 cup broccoli florets

1 cup snap peas

2 green onions, chopped

Sesame seeds, for garnish

Instructions

Prepare the Tofu:

    - Begin by pressing the tofu to remove excess moisture, then cut it into 1-inch cubes.

      - Toss the tofu cubes in a bowl with cornstarch, salt, and pepper until well coated.

        Cook the Tofu:

          - In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the tofu cubes.

            - Cook for about 5-7 minutes or until golden brown, flipping occasionally for even cooking. Remove the tofu from the skillet and set aside.

              Make the Sauce:

                - In the same skillet, reduce the heat to medium and add the minced garlic and grated ginger. Sauté for 1-2 minutes, until fragrant.

                  - In a small bowl, whisk together honey, soy sauce, rice vinegar, and sesame oil. Pour this mixture into the skillet, stirring to combine with the garlic and ginger. Let it simmer for about 2-3 minutes until slightly thickened.

                    Combine Tofu and Sauce:

                      - Add the cooked tofu back to the skillet and gently stir to coat it in the honey garlic sauce. Cook for another 2-3 minutes until the tofu is heated through and well glazed with the sauce.

                        Prepare the Rice:

                          - While the tofu is cooking, rinse the jasmine rice under cold water to remove excess starch. In a saucepan, bring the water or vegetable broth to a boil. Add the rice, lower the heat to a simmer, cover, and cook for 15 minutes, or until the water is absorbed. Remove from heat and let it stand for 5 minutes before fluffing with a fork.

                            Steam the Vegetables:

                              - In a small pot or steamer, quickly steam the broccoli florets and snap peas for about 3-4 minutes, until bright green and tender-crisp.

                                Assemble the Bowl:

                                  - In serving bowls, layer the fluffy jasmine rice, followed by the honey garlic tofu, and top with steamed broccoli and snap peas.

                                    - Garnish with chopped green onions and a sprinkle of sesame seeds for added flavor and crunch.

                                      Serve and Enjoy:

                                        - Serve your delicious Honey Garlic Tofu & Rice Bowl warm and enjoy the sweet and savory flavors!
