Ingredients

For the Marinade:

1/4 cup honey

1/4 cup soy sauce (low-sodium recommended)

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon red pepper flakes (adjust to taste)

For the Skewers:

1 pound large shrimp, peeled and deveined

1 bell pepper (red or yellow), cut into 1-inch pieces

1 small zucchini, sliced into 1/2 inch thick rounds

1 cup cherry tomatoes

1 red onion, cut into wedges

Salt and pepper, to taste

2 tablespoons chopped fresh cilantro (for garnish)

Equipment:

Wooden or metal skewers, soaked in water if wooden

Instructions

Prepare the Marinade:

In a medium mixing bowl, whisk together honey, soy sauce, minced garlic, grated ginger, sesame oil, rice vinegar, and red pepper flakes until well combined. Reserve 1/4 cup of the marinade for basting later.

      Marinate the Shrimp:

Place the shrimp in a large zip-top bag or a shallow dish. Pour the remaining marinade over the shrimp, ensuring they are fully coated. Seal the bag (or cover the dish) and refrigerate for at least 30 minutes, preferably up to 1 hour for enhanced flavor.

          Prep the Vegetables:

While the shrimp is marinating, prepare your vegetables. Cut the bell pepper, zucchini, and red onion into bite-sized pieces. Rinse the cherry tomatoes and set everything aside.

              Assemble the Skewers:

Preheat your grill to medium-high heat. Thread the marinated shrimp and your choice of vegetables onto the skewers, alternating between shrimp and vegetables for a colorful presentation. Leave a little space between each item for even cooking. Season with salt and pepper to taste.

                  Grill the Skewers:

Place the skewers on the preheated grill. Cook for about 2-3 minutes per side, until the shrimp is opaque and the vegetables are tender and slightly charred. During the last couple of minutes, baste with the reserved marinade.

                      Serve:

Once cooked, remove the skewers from the grill. Garnish with chopped fresh cilantro. You can serve these skewers over a bed of rice or a fresh green salad, with any leftover marinade drizzled over the top.

Enjoy your Sweet and Savory Honey Garlic Shrimp & Veggie Skewers, perfect for a delightful summer cookout or a cozy dinner!
